Chocolate Chip Cookies Safe for Troubled Tummys

On week 5 of THE GUT REFRESH and day 2 of my period sooooo I really needed a low FODMAP approved, gluten-free, dairy-free, egg-free sweet treat with all its gooey, warm goodness and you guys… these HIT THE SPOT!

I also loved that it was completely possible with ALL PANTRY ITEMS! With the pandemic, running the GUT & BODY REFRESH challenge, putting together formulations and being a mom… any time I can avoid the store. I do. Plus now I have a ready to make treat whenever the urge hits.

Goods To Get:

Instructions:

  • Preheat oven to 350 Fahrenheit ⁣

  • Combine dry ingredients until fully blended then add in wet ingredients ⁣

  • Add water 1 tbsp at a time if needed ⁣

  • Scoop onto a lined baking sheet (about 1.5 inch balls)

  • Gently press down to about 1/2 inch thick⁣

  • Bake for about 6 minutes or until starting to lightly brown

  • Add chocolate chips and bake another 2 minutes ⁣

  • Let cool, add a pinch of salt + enjoy!

I used cassava and almond flour because that’s what I had on hand. (almond flour becomes HIGH FODMAP at 1/2 a cup of flour but since I’m only eating one or two cookies it stays below that threshold)

HERE’S A LIST OF LOW FODMAP FLOURS.

  • Almond meal (FODMAP content varies)

  • Buckwheat flour (low FODMAP)

  • Corn flour (low FODMAP)

  • Maize flour (low FODMAP)

  • Millet flour (low FODMAP)

  • Organic sieved spelt flour (low FODMAP)

  • Quinoa flour (low FODMAP)

  • Rice flour (low FODMAP)

I can’t wait for you guys to try these! I’ve been playing around in the kitchen and really honing in on my baking skills. Expect to see some low FODMAP, dairy-free, gluten-free and egg-free brownies and almond butter bread! Let me know if you make the cookies and/or what flour or additions you use!
