Chocolate Chip Cookies Safe for Troubled Tummys
On week 5 of THE GUT REFRESH and day 2 of my period sooooo I really needed a low FODMAP approved, gluten-free, dairy-free, egg-free sweet treat with all its gooey, warm goodness and you guys… these HIT THE SPOT!
I also loved that it was completely possible with ALL PANTRY ITEMS! With the pandemic, running the GUT & BODY REFRESH challenge, putting together formulations and being a mom… any time I can avoid the store. I do. Plus now I have a ready to make treat whenever the urge hits.

Goods To Get:
2 cups gluten-free flour , I used 1 cup almond flour & 1 cup cassava flour
1 tsp baking soda
3/4 cup coconut sugar
1/3 cup coconut oil ( I used unrefined because I wanted that coconut flavor but if you don’t like the taste of coconut then snag yourself some refined coconut oil)
1/2 cup maple syrup
1 tsp vanilla extract
chocolate chips, these are my favorite to use but I used these ones and they worked out great as well.
water as needed
Instructions:
Preheat oven to 350 Fahrenheit
Combine dry ingredients until fully blended then add in wet ingredients
Add water 1 tbsp at a time if needed
Scoop onto a lined baking sheet (about 1.5 inch balls)
Gently press down to about 1/2 inch thick
Bake for about 6 minutes or until starting to lightly brown
Add chocolate chips and bake another 2 minutes
Let cool, add a pinch of salt + enjoy!
I used cassava and almond flour because that’s what I had on hand. (almond flour becomes HIGH FODMAP at 1/2 a cup of flour but since I’m only eating one or two cookies it stays below that threshold)
