Chicken, rice n root veggies: Non Perishable Edition
Hello, hello.
It’s day two of quarantine and I’m already going stir crazy and trying not to eat my way through this thing. Which is hard if you’ve seen my snack drawer. It’s a beautiful display of Primal Chocolate coconut butter cups, Loving Earth chocolates, organic fruit snacks and Unreal Coconut chocolate bars.

And lo I digress. Let’s get back to the topic at hand. Covid-19 is taking the world by storm, this guy in Utah has it and is being a real peach and sharing his journey. He even contacted all those that he may have come in contact with between the time he got it to the time he tested positive for it.

Also interesting is both he and Organic Olivia’s parents who have COVID-19 complain of gastrointestinal issues as a symptom of the virus.
This is a good reminder to take fabulous care of our guts and who knows, maybe all that toilet paper will come in handy after all!! ;-)

Goods To Get:
Garlic infused oil you can also use regular cold-pressed olive oil and 2 cloves of garlic.
1 Bag Organic Frozen Root Vegetables: I used one that has sweet potatoes, beets, carrots and apples.
1 cup frozen Kale or mustard greens
1 can of chicken or 1 cup chicken
1 packet Brown and Red Rice
REAL salt to taste, make sure to buy this brand to get the trace minerals.
Instructions:
Squeeze pouch of rice to seperate. Tear 2 inches to vent. Heat on High for 90 seconds.
Add root veggie medley to skillet. Add 1 tablespoon of cooking oil (I use avocado oil). Do not add water. Cook uncovered on medium-high for 8 minutes, stirring occasionally.
Add canned chicken, thyme, garlic-infused olive oil and salt to the mixture. Stir occasionally for 2 minutes or until chicken is warmed.
Add in the greens until wilted.
Top rice with the chicken and veggie mixture.
