Low FODMAP All-In-One-Chicken

I’m not a huge fan of chicken.. unless it’s fried. I know, I know that doesn’t win me cool points in the holistic nutritionist club but it’s the gosh dang truth.
I don’t force myself to eat “healthy” things when I don’t enjoy them butttt this chicken was moist..
I might hate the word moist more than chicken but when you combine them it’s delicious. It’s like two negatives making a positive!
Then I use the bones for my homemade gut sealing bone broth because I’m just savvy like that.
Goods To Get:
3-4 lbs Whole Chicken
6 large carrots, chopped
1 large sweet potato chopped
3 green onion (green part only)Spices
1 tbsp dried thyme
1 tbsp dried rosemary
½ tbsp salt
1 tsp dried marjoram
1 tbsp garlic infused olive oil Optional: bacon
Instructions:
Place carrots and sweet potato in the bottom of the slow cooker
Mix the thyme, rosemary, salt marjoram and garlic-infused olive oil all over chicken, under the skin as much as possible. Place chicken on top of veggies in the slow cooker and top with green onion.
Cook on high 4-6 hours, or low for 7-9 hours until the chicken falls apart.
