Tropical Coconut Chia Seed Pudding: Vitamin C + Collagen

Pudding:
1 can coconut milk, 13 ounce can
1/4 cup organic maple syrup
1 Tsp organic vanilla
1 Tsp organic ground cardamom
1 pinch of real salt
1/2 cup water
1 Scoop COLLAGEN PEPTIDES, collagen boosting powder

4 Tablespoons chia seeds, 6 Tbs if you want it THICK
1 cup chopped pineapple, mangos, and/or bananas (if you want this to be lowFODMAP do green bananas and no mangos)
2 – mason jars, the 1 pint size
Toppings: optional
Organic macadamia nuts
Organic coconut, shredded
Instructions:
Mix the coconut milk, maple syrup, vanilla, cardamom, collagen powder and water until fully combined, I used a blender for mine!
Place 2 Tablespoons of chia seeds in each of the 2 jars.
Pour the coconut mixture evenly into each jar. Stir to fully mix in the chia seeds and secure the lids on the jars.
Refrigerate overnight before serving.
Serve with your choice of chopped fruit, macadamia nuts and shredded coconut.
