Tropical Coconut Chia Seed Pudding: Vitamin C + Collagen

Goods To Get:

Pudding:

  • 1 can coconut milk, 13 ounce can

  • 1/4 cup organic maple syrup

  • 1 Tsp organic vanilla

  • 1 Tsp organic ground cardamom

  • 1 pinch of real salt

  • 1/2 cup water

  • 1 Scoop COLLAGEN PEPTIDES, collagen boosting powder

    •  4 Tablespoons chia seeds, 6 Tbs if you want it THICK

    • 1 cup chopped pineapple, mangos, and/or bananas (if you want this to be lowFODMAP do green bananas and no mangos)

    • 2 – mason jars, the 1 pint size

Instructions:

  • Mix the coconut milk, maple syrup, vanilla, cardamom, collagen powder and water until fully combined, I used a blender for mine!

  • Place 2 Tablespoons of chia seeds in each of the 2 jars.

  • Pour the coconut mixture evenly into each jar. Stir to fully mix in the chia seeds and secure the lids on the jars.

  • Refrigerate overnight before serving.

  • Serve with your choice of chopped fruit, macadamia nuts and shredded coconut.
